

PRINTPotassium bitartrate (cream of tartar) acts as a “seeding” agent during cold stabilization, to hasten tartrate precipitation. A dose of 1/4 – 5 pounds/1000 Gallons is stirred into the wine when it has reached its coldest temperature, then allowed to settle. The finely powdered crystals act as nuclei for crystallization of potassium bitartrate from the wine.
