Tartaric acid influences the buffer capacity of a wine and is indicative of a wine’s chemical stability. The Tartaric Acid Assay Kit is based on the chemical reaction between tartaric acid and vanadate (reaction time: 4 min). Each kit contains sufficient reagents for 200 tests using a standard manual spectrophotometer, 400 tests using the MegaQuant™ Wave, or 2000 tests using an auto-analyzer or microplate reader. All reagents are stable for >1 year.
