Total reducing sugar (D-fructose and D-glucose) indicates the amount of sugar available to yeast to be converted into ethanol. The total fructose and glucose remaining after fermentation – the ‘residual sugar’ – indicates how dry a finished wine is likely to be. The D-Fructose/D-Glucose Assay Kit has a reaction time of 13 min. Each kit contains reagents for 110 tests using a standard manual spectrophotometer, 220 tests using the MegaQuant™ Wave, or 1100 tests using an auto-analyzer or microplate reader.
